Ingredients
  

1 lb beef sirloin, sliced into thin strips

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz mushrooms, sliced

1 teaspoon paprika

Salt and pepper to taste

1 cup beef broth

1 tablespoon Worcestershire sauce

1 cup sour cream

2 tablespoons all-purpose flour

12 oz egg noodles

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

    Sauté the Beef: In a large skillet, heat olive oil over medium-high heat. Add the beef strips in batches, searing them for about 2-3 minutes until browned. Remove from skillet and set aside.

      Cook Vegetables: In the same skillet, add the onions and garlic. Sauté for about 3-4 minutes until the onions are translucent. Add the mushrooms and cook for another 5 minutes until they soften.

        Add Seasonings: Sprinkle in the paprika, salt, and pepper. Stir well to combine, letting the flavors meld for a minute.

          Make the Sauce: Sprinkle the flour over the mushroom mixture, stirring constantly for about 1 minute. Slowly pour in the beef broth and Worcestershire sauce, stirring until smooth. Bring the mixture to a simmer and cook for about 5 minutes until it thickens.

            Add Sour Cream: Lower the heat and stir the sour cream into the sauce until well combined. Then add the browned beef back into the skillet, and heat through for 2-3 minutes.

              Combine with Noodles: Toss the cooked egg noodles into the skillet with the beef and sauce, mixing to coat well with the creamy mixture.

                Serve: Garnish with chopped fresh parsley and serve hot, with extra sour cream on the side if desired.
