1.5 lbs beef sirloin, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, diced

3 cloves garlic, minced

1 cup beef broth

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon paprika

1/4 cup all-purpose flour

Salt and pepper, to taste

1 cup mushrooms, sliced (optional)

Fresh parsley, chopped for garnish

Instructions
 

Start by seasoning the beef cubes with salt and pepper. In a large skillet, heat the olive oil over medium-high heat.

    Add the beef to the skillet, browning it on all sides. This should take about 5-7 minutes. Remove the beef from the skillet and set aside.

      In the same skillet, add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

        If using, add the sliced mushrooms to the skillet and sauté until they are tender.

          Sprinkle the flour over the vegetable mixture and stir well to combine. Cook for about 2 minutes to remove the raw flour taste.

            Gradually add the beef broth, Worcestershire sauce, soy sauce, thyme, and paprika, stirring constantly to avoid lumps.

              Bring the mixture to a simmer and add the browned beef back into the skillet. Reduce the heat to low and let it simmer for about 15-20 minutes, or until the beef is tender and the gravy thickens.

                Adjust seasoning with additional salt and pepper if needed. Serve hot, garnished with fresh parsley.
