Ingredients

2 pounds of beef tips (chuck or sirloin)

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

2 cups beef broth

1 cup mushrooms, sliced (optional)

2 tablespoons Worcestershire sauce

2 tablespoons soy sauce

1 teaspoon dried thyme

1 teaspoon paprika

1 tablespoon cornstarch (optional, for thickening)

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Sear the Beef: In a large skillet or pot, heat the olive oil over medium-high heat. Season the beef tips with salt and pepper, then add them to the skillet. Sear for 4-5 minutes until browned on all sides. Remove from the skillet and set aside.

Sauté Aromatics: In the same skillet, add the chopped onion and garlic. Sauté for 3-4 minutes until the onion becomes translucent. If using, add the mushrooms and cook for an additional 2-3 minutes.

Combine Ingredients: Return the beef tips to the skillet. Pour in the beef broth, Worcestershire sauce, and soy sauce. Stir in the dried thyme and paprika. Bring to a simmer.

        Cook:

          - Stove Top Method: Cover the skillet, reduce the heat to low, and let simmer for about 1.5 hours, stirring occasionally.

            - Crock Pot Method: Transfer everything to a crock pot. Cook on low for 6-8 hours or high for 4 hours.

Thicken (Optional): If you prefer a thicker gravy, mix the cornstarch with a bit of cold water to create a slurry. Stir it into the beef mixture during the last 10 minutes of cooking time.

Serve: Once the beef is tender and the gravy has reached your desired consistency, taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley if desired.
