Ingredients
  

1 cup mixed berries (strawberries, blueberries, raspberries)

1 cup sparkling water

1/2 cup heavy cream

2 tablespoons vanilla syrup (or to taste)

Fresh mint leaves for garnish

Instructions
 

In a small saucepan over medium heat, combine the mixed berries with 1/4 cup of water. Cook until the berries are soft and their juices are released, about 5-7 minutes.

    Remove the berry mixture from the heat and strain through a fine mesh sieve to separate the juice from the pulp. Press the berries gently with a spoon to extract as much juice as possible. Set the juice aside to cool.

      In a separate bowl, whip the heavy cream until soft peaks form. Add the vanilla syrup and mix gently until incorporated.

        Fill a tall glass with ice cubes up to halfway. Pour the cooled berry juice over the ice.

          Next, slowly add in the sparkling water, allowing it to bubble and mix gently with the berry juice.

            Top the drink with a generous dollop of vanilla whipped cream.

              Garnish with fresh mint leaves for a refreshing touch. Serve immediately with a straw!
