1 ½ cups all-purpose flour

1 tsp baking soda

½ tsp baking powder

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup ripe bananas, mashed (about 2 large bananas)

¼ cup buttermilk

1 cup vanilla pudding (store-bought or homemade)

Whipped cream, for topping

Vanilla wafers, crushed, for garnish

Fresh banana slices, for garnish

Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.

    In a medium mixing bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.

      In a large bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.

        Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.

          Incorporate the mashed bananas into the mixture and mix until combined.

            Alternately add the dry ingredient mixture and buttermilk into the banana mixture, starting and ending with the dry ingredients. Fold gently until just combined, being careful not to overmix.

              Fill each cupcake liner about 2/3 full with the batter. Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.

                Allow the cupcakes to cool in the tin for 5 minutes, then remove and let them cool completely on a wire rack.

                  Once cooled, cut a small cone out of the center of each cupcake and fill the hole with vanilla pudding.

                    Top each cupcake with a dollop of whipped cream, adding crushed vanilla wafers and fresh banana slices as a garnish.
