Ingredients

1 lb boneless, skinless chicken thighs

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

1/2 cup sesame seeds

1/4 cup all-purpose flour

2 tbsp vegetable oil (for frying)

1/4 cup soy sauce

2 tbsp honey

1 tbsp rice vinegar

1 tsp sesame oil

2 cloves garlic, minced

1 tsp ginger, grated

1-2 green onions, sliced (for garnish)

Salt and pepper to taste

Instructions

Prepare Chicken: Cut the chicken thighs into bite-sized pieces and season with salt and pepper.

Breading Station: Set up three shallow dishes. In the first dish, place the cornstarch. In the second dish, pour the beaten eggs. In the third dish, mix panko breadcrumbs, sesame seeds, and flour.

Coat Chicken: Dip each chicken piece in cornstarch, ensuring it's fully coated. Then dip it in the beaten eggs, allowing excess to drip off. Finally, coat in the panko-sesame mixture, pressing lightly to adhere.

Fry Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the coated chicken bites in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and place on a paper towel-lined plate.

Make Sauce: In a small saucepan over medium heat, combine soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Stir and cook for 2-3 minutes until slightly thickened.

Toss Chicken: Drizzle the sauce over the crispy chicken bites or toss them in a bowl to coat well.

Serve: Transfer the sesame chicken bites to a serving platter and garnish with sliced green onions. Serve warm alongside your favorite dipping sauce!
