6 slices of brioche bread, cubed

3 large eggs

1 cup milk

1/4 cup maple syrup

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup blueberries (fresh or frozen)

1/4 cup pecans, chopped (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a muffin tin with non-stick spray.

    In a large mixing bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until well combined.

      Gently fold in the cubed brioche bread, ensuring all the pieces are coated with the egg mixture. Let it sit for about 10 minutes to soak.

        Add the blueberries and chopped pecans (if using) to the mixture and stir carefully to combine.

          Using a spoon or your hands, evenly distribute the bread mixture into the prepared muffin cups, filling each cup about 3/4 full.

            Bake in the preheated oven for 18-20 minutes or until the muffin cups are puffed and golden brown.

              Remove from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack.

                Serve warm, dusted with powdered sugar if desired, and drizzle with additional maple syrup for extra sweetness.
