Ingredients
  

1 lb chicken breast, cut into 1-inch cubes

1 cup pineapple chunks (fresh or canned)

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 red onion, cut into 1-inch pieces

1/4 cup soy sauce

1/4 cup brown sugar

2 tbsp olive oil

1 tbsp minced garlic

1 tsp minced ginger

1 tsp black pepper

Juice of 1 lime

8 skewers (soaked in water for 30 mins if wooden)

Instructions
 

In a large bowl, whisk together soy sauce, brown sugar, olive oil, minced garlic, minced ginger, black pepper, and lime juice to create a marinade.

    Add the chicken cubes to the marinade and toss well to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

      Preheat your grill to medium-high heat.

        Thread the marinated chicken, pineapple chunks, bell peppers, and red onion onto the skewers, alternating ingredients for a colorful presentation.

          Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

            Remove from the grill and let them rest for a few minutes before serving.

              Serve with extra lime wedges and enjoy the taste of the islands!
