12 oz. tri-color rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup black olives, sliced

1/2 cup bell peppers (red and yellow), diced

1/2 cup red onion, finely chopped

1 cup mozzarella balls (bocconcini), halved

1/4 cup fresh basil leaves, chopped

1/4 cup extra virgin olive oil

3 tablespoons red wine vinegar (or apple cider vinegar)

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Begin by cooking the tri-color rotini pasta according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, sliced olives, diced bell peppers, and finely chopped red onion.

      Add the cooked and cooled pasta to the bowl of vegetables, along with the halved mozzarella balls and chopped basil.

        In a small bowl, whisk together the olive oil, vinegar, dried oregano, salt, and pepper until well combined.

          Pour the dressing over the pasta and vegetable mixture, and gently toss until everything is evenly coated.

            Taste and adjust seasoning if necessary. If desired, add more olive oil or a splash of vinegar for extra flavor.

              Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.

                Serve chilled or at room temperature, garnished with additional basil leaves if desired.
