Ingredients

1 lb elbow macaroni

4 cups sharp cheddar cheese, grated

2 cups Gruyère cheese, grated

1 cup cream cheese, softened

4 cups whole milk

1/2 cup unsalted butter

1/2 cup all-purpose flour

1 1/2 tsp garlic powder

1 tsp onion powder

1/2 tsp mustard powder

Salt and black pepper to taste

1/4 cup truffle oil

1 cup panko breadcrumbs

1/2 cup Parmesan cheese, grated

Chopped parsley for garnish (optional)

Instructions

Prepare the Pasta: Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Add the flour and whisk for about 1 minute to create a roux. Slowly pour in the milk while continuously whisking to avoid lumps. Continue to cook and whisk until the mixture thickens (about 5-7 minutes).

Add Cheese: Lower the heat and stir in the cream cheese until melted. Gradually add in both cheddar and Gruyère cheeses, stirring constantly until all the cheese is melted and smooth. Season with garlic powder, onion powder, mustard powder, salt, and pepper.

Combine: Add the cooked macaroni to the cheese sauce and stir to combine. Drizzle in the truffle oil and mix well.

Prepare Topping: In a small bowl, combine the panko breadcrumbs and Parmesan cheese. Drizzle with a little olive oil to help them brown when baked.

Assemble and Bake: Preheat your oven to 350°F (175°C). In a greased 9x13-inch baking dish, pour in the macaroni and cheese mixture. Evenly spread the breadcrumb topping over the macaroni.

Bake: Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.

Garnish and Serve: Remove from the oven and let it sit for 5 minutes before serving. Garnish with chopped parsley if desired.
