Ingredients
  

2 cups cooked chicken, shredded

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1 small red bell pepper, diced

1 small onion, diced

1 jalapeño, finely chopped (optional, for heat)

1 tsp cumin

1 tsp smoked paprika

½ tsp garlic powder

½ tsp salt

½ tsp pepper

4 large flour tortillas

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Salsa and sour cream (for serving)

Instructions
 

Prepare the Filling: In a large bowl, combine shredded chicken, Monterey Jack cheese, cheddar cheese, bell pepper, onion, jalapeño, cumin, smoked paprika, garlic powder, salt, and pepper. Mix until all ingredients are well incorporated.

    Heat the Pan: In a large skillet, heat 1 tablespoon of olive oil over medium heat.

      Assemble the Quesadillas: Place one tortilla in the skillet. Spread a portion of the chicken and cheese mixture over half of the tortilla. Fold the tortilla over to cover the filling.

        Cook the Quesadilla: Cook for about 3-4 minutes on each side, or until the tortilla is golden brown and crispy, and the cheese has melted. Repeat with the remaining tortillas, adding additional oil to the skillet as needed.

          Slice and Serve: Remove the quesadillas from the skillet and let them cool for a minute. Slice into wedges and garnish with fresh cilantro. Serve with salsa and sour cream on the side.
