Ingredients
  

2 medium apples, peeled and diced (Granny Smith or Honeycrisp work well)

1 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

1/2 cup powdered sugar (for coating)

Oil for frying (vegetable or canola)

Optional: additional cinnamon for sprinkling

In a medium bowl, combine the diced apples with a sprinkle of cinnamon and set aside.

    In another mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt until well combined.

      In a separate bowl, mix the milk, egg, and vanilla extract until combined.

        Slowly add the wet ingredients into the dry ingredients, stirring until just mixed. Be careful not to over-mix; it's okay if there are a few lumps.

          Gently fold in the diced apples until evenly distributed throughout the batter.

            Heat about 2 inches of oil in a deep pan or pot to 350°F (175°C). To test if the oil is ready, drop a small piece of batter into the oil; it should sizzle and float to the surface.

              Using a small spoon or cookie scoop, drop tablespoon-sized portions of the batter into the hot oil, making sure not to overcrowd the pan. Fry in batches until golden brown, about 2-3 minutes on each side.

                Once cooked, use a slotted spoon to transfer the fritter bites to a paper towel-lined plate to absorb excess oil.

                  While still warm, roll the fritter bites in powdered sugar to coat evenly. For an extra touch, sprinkle with additional cinnamon if desired.

                    Allow to cool slightly before serving.
