4 large eggs

1/2 cup of heavy cream

1 cup of fresh spinach, chopped

1 medium tomato, sliced

1 cup of shredded cheese (cheddar or Swiss)

4 strips of crispy bacon or turkey bacon

Salt and pepper to taste

1 tablespoon of olive oil

Fresh herbs (chives or parsley) for garnish

Preheat your oven to 350°F (175°C). Slice the croissants in half lengthwise and place them on a baking sheet, cut side up.

    In a medium bowl, whisk together the eggs, heavy cream, a pinch of salt, and pepper until well combined.

      Heat olive oil in a non-stick skillet over medium heat. Add the chopped spinach and sauté for 1-2 minutes until wilted.

        Pour the egg mixture into the skillet with the spinach, stirring gently. Cook until the eggs are just set but still creamy and slightly runny (about 3-5 minutes).

          While the eggs are cooking, place the halved croissants in the oven for about 5 minutes to warm and lightly toast them.
