3 cups fresh strawberries, hulled and halved

1 cup granulated sugar (divided)

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 pre-made pie crust (9-inch)

1 cup heavy whipping cream

2 tablespoons powdered sugar

Fresh mint leaves for garnish

Preheat your oven to 350°F (175°C). Place the pie crust in a 9-inch pie dish and pre-bake for about 10-12 minutes until lightly golden. Let it cool completely.

    In a medium saucepan over medium heat, combine 1 cup of the halved strawberries, ½ cup of granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir well to combine.

      Cook the mixture, stirring frequently, until it comes to a boil and thickens, about 5-7 minutes. Remove from heat and let it cool for about 10 minutes.

        Once the mixture is cooled, fold in the remaining 2 cups of fresh strawberries gently to coat them in the sauce.

          Pour the strawberry mixture into the cooled pie crust, spreading it evenly. Refrigerate for at least 2 hours or until set.

            In a mixing bowl, beat the heavy whipping cream and powdered sugar until soft peaks form.

              After the pie has set, spread the whipped cream over the top or serve on the side.
