1 cup strong brewed coffee (cooled)

3 large eggs, separated

1/2 cup granulated sugar

8 oz mascarpone cheese, at room temperature

1 teaspoon vanilla extract

1 1/2 cups heavy whipping cream

24 ladyfinger biscuits

Unsweetened cocoa powder for dusting

Dark chocolate shavings for garnish (optional)

In a mixing bowl, beat the egg yolks and sugar together until the mixture becomes pale and creamy. Incorporate the mascarpone cheese and vanilla extract until smooth and well combined.

    In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until just combined. Make sure to keep the mixture light and airy.

      In another bowl, beat the egg whites until stiff peaks form. Carefully fold the egg whites into the mascarpone mixture until well incorporated. Set aside.

        Quickly dip each ladyfinger into the cooled coffee, ensuring they absorb some but don’t become overly soggy.

          In a square or rectangular dish, start layering. Place half of the coffee-dipped ladyfingers at the bottom of the dish, ensuring they're laid out evenly.

            Spread half of the mascarpone mixture over the ladyfingers in an even layer.

              Repeat the layers: another round of coffee-dipped ladyfingers followed by the rest of the mascarpone mixture on top.

                Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set.
