Ingredients
  

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup cold butter, cubed

3/4 cup buttermilk

1 pound breakfast sausage (sage-flavored if available)

3 tablespoons all-purpose flour (for the gravy)

2 cups milk

Salt and pepper to taste

1 tablespoon freshly chopped parsley (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the flour, baking powder, baking soda, and salt.

      Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.

        Make a well in the center and add the buttermilk. Gently mix until just combined. Be careful not to overwork the dough.

          Turn the dough out onto a floured surface and knead gently about 3-4 times until it comes together. Roll out to about 1-inch thickness.

            Cut out rounds using a biscuit cutter (approximately 2-3 inches). Gather and re-roll the scraps as needed. You should have about 12 rounds.

              In a skillet over medium heat, cook the breakfast sausage until browned and cooked through, breaking it apart with a spoon as it cooks.

                Once the sausage is cooked, sprinkle the 3 tablespoons of flour over it and stir to combine for about 1 minute.

                  Gradually pour in the milk, stirring constantly to avoid lumps. Allow the mixture to simmer until thickened, about 5 minutes. Season with salt and pepper to taste.

                    To assemble the bombs, take a biscuit round, add a spoonful of the sausage gravy in the middle, and fold the edges over to seal. Place seam-side down on the prepared baking sheet.

                      Repeat with the remaining biscuit rounds and gravy until all are formed.

                        Bake in the preheated oven for 12-15 minutes or until golden brown on top.

                          Remove from the oven and let cool slightly before serving.
