2 cups cooked chicken, shredded

4 cups chicken broth

1 cup frozen mixed vegetables (peas, carrots, corn)

1 onion, finely chopped

2 garlic cloves, minced

1 teaspoon dried thyme

1 teaspoon dried parsley

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups Bisquick™ mix

2/3 cup milk

1 tablespoon butter

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion is translucent and fragrant.

    Pour in the chicken broth, and bring to a gentle boil. Stir in the shredded chicken and frozen mixed vegetables. Add the dried thyme, parsley, salt, and pepper. Let it simmer for about 5-7 minutes to meld the flavors.

      In a separate bowl, mix the Bisquick™ mix and milk together until it forms a thick batter.

        Drop spoonfuls of the Bisquick™ batter onto the simmering chicken mixture—make sure they are evenly spaced, as they will expand while cooking.

          Cover the pot with a lid and reduce the heat to low. Let it cook for about 15-18 minutes without lifting the lid. This allows the dumplings to steam and become fluffy.

            After the cooking time, remove the lid and check if the dumplings are cooked through (should be firm and fluffy). Stir gently to make sure everything is combined before serving.
