Ingredients
  

500g chicken breast, thinly sliced

2 tablespoons black peppercorns, freshly cracked

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon rice wine or sherry

2 tablespoons vegetable oil

3 cloves garlic, minced

1-inch piece ginger, minced

1 bell pepper, sliced (any color)

1 medium onion, sliced

2 green onions, chopped

1 teaspoon sugar

Salt to taste

Optional: red pepper flakes for extra heat

Instructions
 

Marinate the Chicken: In a bowl, combine the sliced chicken with soy sauce, oyster sauce, rice wine, and half of the freshly cracked black pepper. Allow it to marinate for at least 30 minutes for the flavors to meld.

    Prepare the Stir-fry: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and ginger, stirring quickly for about 30 seconds until fragrant.

      Cook the Chicken: Add the marinated chicken to the skillet. Stir-fry for about 5-7 minutes or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

        Stir-fry the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the onions and bell pepper; stir-fry for about 3-4 minutes until they are tender yet crispy.

          Combine: Return the cooked chicken to the skillet. Add the remaining black pepper, sugar, and salt to taste. Stir well to combine all ingredients. Cook for an additional 2 minutes to ensure everything is heated through.

            Finish and Serve: Remove from heat and garnish with chopped green onions. Serve hot over steamed rice or noodles for a complete meal.
