4 (6 oz) salmon fillets

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

2 cups fresh spinach, chopped

1/2 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/4 teaspoon nutmeg

1 tablespoon lemon juice

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare the Salmon: Pat the salmon fillets dry with paper towels. Using a sharp knife, cut a pocket into each salmon fillet by slicing down the center, being careful not to cut all the way through.

      Season the Salmon: In a small bowl, combine the smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture all over the salmon fillets, including inside the pockets.

        Make the Filling: In a skillet over medium heat, add the olive oil and spinach. Sauté until wilted, about 2-3 minutes. Remove from heat and let it cool slightly. In a mixing bowl, combine the sautéed spinach, cream cheese, grated Parmesan, nutmeg, and lemon juice. Mix until well combined.

          Stuff the Salmon: Gently fill each salmon pocket with the creamy spinach mixture, securing it with toothpicks if needed.

            Bake the Salmon: Place the stuffed salmon fillets on a lined baking sheet. Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).

              Serve: Carefully remove the toothpicks, if used. Serve the salmon immediately with a side of steamed vegetables or a fresh salad.
