4 salmon fillets, skinless

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

1/4 cup cream cheese, softened

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon Cajun seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons olive oil

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Spinach Filling: In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the minced garlic for about 30 seconds.

      Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

        In a bowl, combine the sautéed spinach, grated Parmesan cheese, and softened cream cheese until well mixed. Set aside.

          Prepare the Salmon: Using a sharp knife, make a pocket in each salmon fillet by cutting horizontally but not all the way through. Be careful not to cut through the bottom.

            Stuff the Salmon: Generously fill each salmon pocket with the spinach and cheese mixture.

              Season the Salmon: In a small bowl, mix the smoked paprika, Cajun seasoning, salt, and pepper. Sprinkle this seasoning mixture evenly on both sides of each stuffed salmon fillet.

                Blacken the Salmon: In an oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Place the stuffed salmon fillets in the skillet and sear for 2-3 minutes on each side until golden brown.
