4 salmon fillets, skinless

2 cups fresh spinach, chopped

1 cup grated Parmesan cheese

1/2 cup cream cheese, softened

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon smoked paprika

1 teaspoon cayenne pepper

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Prepare the Filling: In a mixing bowl, combine the chopped spinach, grated Parmesan cheese, cream cheese, and minced garlic. Season with salt and pepper to taste and mix until well combined.

    Prep the Salmon: Pat the salmon fillets dry with paper towels. Use a sharp knife to create a pocket in each fillet by slicing about 2/3 of the way through, being careful not to cut all the way through.

      Stuff the Salmon: Generously fill each salmon pocket with the spinach and cheese mixture. Make sure to pack it in tightly so it doesn't fall out during cooking.

        Season the Salmon: In a small bowl, mix together the smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper. Rub this spice mix evenly over the surface of each stuffed salmon fillet.

          Cook the Salmon: Heat olive oil in a large skillet over medium-high heat. Once hot, add the salmon fillets, presentation side down, and sear for about 4-5 minutes, or until a blackened crust forms. Carefully flip the fillets and continue cooking for another 4-5 minutes until the salmon is cooked through and flakes easily with a fork.

            Serve: Remove the salmon from the skillet and let it rest for a minute. Serve with lemon wedges on the side for an added zest.
