4 salmon fillets, skin removed

2 cups fresh spinach, chopped

1 cup Parmesan cheese, shredded

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Instructions
 

Preheat your oven to 400°F (200°C).

    In a skillet over medium heat, add olive oil. Sauté the chopped spinach until wilted, about 3-4 minutes. Remove from heat.

      In a mixing bowl, combine sautéed spinach and Parmesan cheese. Mix until evenly combined, then season with a pinch of salt and black pepper.

        Place each salmon fillet on a clean cutting board. Using a sharp knife, carefully slice a pocket into each fillet, being cautious not to cut all the way through.

          Stuff each salmon pocket with the spinach and Parmesan mixture, pressing down gently to secure.

            In a small bowl, mix garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper together. Rub this spice blend onto the outside of the salmon fillets.

              Heat a nonstick oven-safe skillet over medium-high heat. Once hot, place the fillets in the skillet, searing each side for about 3-4 minutes until a crust forms.

                Transfer the skillet to the preheated oven and bake for an additional 8-10 minutes until the salmon is cooked through and flakes easily with a fork.

                  Remove from the oven and allow to rest for a few minutes before serving.
