Ingredients

4 salmon fillets

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust based on spice preference)

1 teaspoon dried thyme

Salt and black pepper to taste

For the Avocado Corn Salsa:

1 cup corn kernels (fresh, canned, or frozen)

2 ripe avocados, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced (optional)

1/2 cup cherry tomatoes, halved

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Instructions

Prepare the Blackening Spice Mix: In a small bowl, combine smoked paprika, garlic powder, onion powder, cayenne pepper, thyme, salt, and black pepper. Mix well.

Season the Salmon: Pat the salmon fillets dry with a paper towel. Rub olive oil over each fillet, then generously coat both sides with the spice mix. Let them sit for about 15 minutes at room temperature for the flavors to meld.

Cook the Salmon: Heat a large skillet (preferably cast iron) over medium-high heat until it’s hot. Place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes without moving them, until the skin is crispy. Carefully flip and cook for an additional 2-3 minutes until the salmon is cooked through and has a blackened crust. Remove from the skillet and set aside.

Prepare the Avocado Corn Salsa: In a medium bowl, combine corn, diced avocado, chopped red onion, jalapeño, cherry tomatoes, and cilantro. Squeeze lime juice over the mixture and season with salt and pepper. Gently toss until well combined.

Serve: Divide the blackened salmon among plates and top generously with avocado corn salsa.
