2 ripe bananas, mashed

1 cup plain yogurt (Greek or regular)

1/3 cup vegetable oil

1/2 cup brown sugar

1/4 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1 cup fresh blueberries (or frozen, if preferred)

Zest of 1 lemon

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan and line the bottom with parchment paper for easy removal.

    In a large mixing bowl, combine the mashed bananas, yogurt, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract. Whisk until fully blended and smooth.

      In a separate bowl, sift together the flour, baking soda, baking powder, and salt.

        Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

          Gently fold in the blueberries and lemon zest, ensuring they are evenly distributed throughout the batter.

            Pour the batter into the prepared loaf pan, smoothing out the top with a spatula.

              Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.

                Once baked, remove from the oven and allow the loaf to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
