Blueberry Cheesecake Crescent Rolls

Ingredients
  

1 can of refrigerated crescent roll dough

8 oz cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup fresh blueberries (or frozen, thawed)

1 tbsp lemon juice

1 egg, beaten (for egg wash)

1 tbsp sugar (for sprinkling)

Optional: whipped cream, for serving

Instructions
 

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

    In a medium bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

      Gently fold in the blueberries and lemon juice to the cream cheese mixture.

        Unroll the crescent roll dough on a clean surface and separate it into triangles according to the package instructions.

          Place a tablespoon of the blueberry cream cheese mixture at the wide end of each crescent triangle.

            Carefully roll up the crescent dough, starting from the wide end and rolling towards the pointed end, to encase the filling. Pinch the sides to seal them.

              Brush each roll with the beaten egg and sprinkle a little sugar on top for a sweet finish.

                Bake in the preheated oven for 12-15 minutes, or until the rolls are golden brown.

                  Remove from the oven and allow them to cool slightly before serving.
