Ingredients
  

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup sour cream

1 cup fresh blueberries

4 oz cream cheese, softened and cut into small cubes

1 tbsp lemon zest

1 tbsp flour (for tossing blueberries)

Instructions
 

Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or spray with cooking spray.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large mixing bowl, cream together the softened butter and sugar using an electric mixer until light and fluffy (about 3-4 minutes).

        Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.

          Add the sour cream to the wet ingredients and mix until just combined.

            Slowly incorporate the dry ingredients into the wet mixture, stirring gently until fully combined. Be careful not to overmix.

              In a small bowl, toss the blueberries with the 1 tbsp of flour (this helps prevent them from sinking in the muffins). Gently fold in the blueberries into the batter.

                Spoon a small amount of batter into each muffin cup (about 1/3 full), then place a cube of cream cheese in the center of each muffin. Top with more batter until the cups are about 2/3 full.

                  Bake in the preheated oven for 20-25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                    Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
