Instructions
In a large mixing bowl, combine the rolled oats and almond milk. Stir well to ensure all oats are submerged.
Add the fresh or frozen blueberries, lemon zest, lemon juice, maple syrup (or honey), vanilla extract, and a pinch of salt. Mix everything together until well combined.
Cover the bowl with plastic wrap or transfer the mixture into individual jars or containers with lids.
Place the oats in the refrigerator for at least 4 hours or overnight (preferably overnight) to allow the oats to absorb the liquid and flavors meld.
In the morning, give the oats a good stir, adding a splash of milk if they seem too thick.
Serve the oats in bowls or jars, topped with additional blueberries, a slice of lemon for garnish, and chopped nuts if desired.
Notes
Adjust sweetness with maple syrup or honey as desired.
