1 cup fresh or frozen blueberries

1 tablespoon lemon juice

2 tablespoons granulated sugar (for blueberry filling)

1 teaspoon cornstarch

2 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup unsalted butter, softened

½ cup brown sugar, packed

½ cup granulated sugar (for cookie dough)

1 large egg

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ teaspoon nutmeg

½ cup powdered sugar (for icing)

2 tablespoons milk (for icing)

Prepare the Blueberry Filling: In a small saucepan, combine the blueberries, lemon juice, 2 tablespoons of granulated sugar, and cornstarch. Cook over medium heat until the mixture starts bubbling and thickens (about 5–7 minutes). Remove from heat and let cool completely.

    Make the Cookie Dough: In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in the egg and vanilla extract, mixing until well combined.

      Combine Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix. Chill the dough in the refrigerator for at least 30 minutes.

        Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

          Assemble Cookies: Take a tablespoon of chilled dough and flatten it slightly in your palm. Place about a teaspoon of the blueberry filling in the center and wrap the dough around it, sealing the edges. Roll into a ball and place on the prepared baking sheet. Repeat for the remaining dough and filling, leaving about 2 inches between each cookie.

            Bake: Bake in the preheated oven for 12–15 minutes or until lightly golden on the bottom. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

              Prepare the Icing: In a small bowl, mix together the powdered sugar and milk until smooth. Drizzle over cooled cookies for a sweet finish.
