1 cup ricotta cheese

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon salt

1/2 cup milk

1 1/2 cups fresh blueberries

Zest of 1 lemon

Powdered sugar for dusting (optional)

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easy removal.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

      Add the ricotta cheese to the butter mixture and mix until well combined.

        Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract and lemon zest.

          In another bowl, whisk together the flour, baking powder, and salt.

            Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the flour mixture, mixing until just combined.

              Gently fold in the fresh blueberries, being careful not to overmix to keep the berries intact.

                Pour the batter into the prepared cake pan, smoothing the top with a spatula.

                  Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

                    Let the cake cool in the pan for about 15 minutes, then transfer to a wire rack to cool completely.

                      Optional: Dust the cooled cake with powdered sugar before serving.
