For the Shrimp:

1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 tsp paprika

1/2 tsp cayenne pepper (adjust to taste)

1 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

2 cups vegetable oil (for frying)

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tbsp sriracha (or more for extra heat)

1 tsp lime juice

1/2 tsp garlic powder

Salt and pepper to taste

For Garnish:

Chopped green onions

Thinly sliced lettuce (optional)

Instructions
 

Marinate the Shrimp:

    - In a bowl, combine the buttermilk and shrimp. Cover and let it marinate in the fridge for at least 30 minutes to an hour.

      Prepare the Breading:

        - In a shallow dish, mix together the flour, cornstarch, paprika, cayenne pepper, garlic powder, salt, and black pepper.

          Make the Bang Bang Sauce:

            - In a separate bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, lime juice, garlic powder, salt, and pepper. Taste and adjust the seasoning according to your preference. Set aside.

              Coat the Shrimp:

                - Remove the marinated shrimp from the fridge. Dredge each shrimp in the flour mixture, making sure it's well-coated. Shake off excess flour.

                  Fry the Shrimp:

                    - Heat the vegetable oil in a deep skillet or frying pan over medium-high heat. Make sure the oil is hot enough (about 350°F or 175°C) before adding the shrimp.

                      - Fry the shrimp in batches, avoiding overcrowding, for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to transfer the cooked shrimp to a paper towel-lined plate to drain excess oil.

                        Combine and Serve:

                          - In a large bowl, gently toss the fried shrimp with the Bang Bang sauce until well coated.
