Ingredients
  

1 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1 teaspoon vanilla extract

1/3 cup heavy cream

1/4 cup vanilla pudding mix (instant)

1/2 cup semi-sweet chocolate chips

2 tablespoons unsweetened cocoa powder

Powdered sugar for dusting (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      In a large bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy, about 3-4 minutes.

        Beat in the egg and vanilla extract until well combined.

          Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.

            In a small bowl, whisk the heavy cream with the vanilla pudding mix until smooth. This will be your filling for the cookies.

              Fold in the chocolate chips into the cookie dough.

                On a prepared baking sheet, drop rounded tablespoons of cookie dough, making sure to leave enough space between them as they will spread.

                  Lightly flatten each cookie before baking.

                    Bake in the preheated oven for about 10-12 minutes or until the edges are slightly golden but the center is still soft.

                      Once cookies are out of the oven, allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

                        Once cooled, use a small spoon or piping bag to fill each cookie with the prepared vanilla pudding mixture, making sure to let it ooze a little out of the sides for that authentic Boston cream pie look!

                          For the chocolate ganache, melt the chocolate chips with the cocoa powder in a microwave-safe bowl in 30-second intervals, stirring between each until smooth.

                            Drizzle the melted chocolate over the filled cookies to create the glaze, allowing it to set.

                              Optionally, dust with powdered sugar before serving.
