1 ½ pounds boneless, skinless chicken thighs, cut into bite-sized pieces

½ cup soy sauce

¼ cup bourbon whiskey

¼ cup brown sugar

2 tablespoons apple cider vinegar

1 tablespoon fresh ginger, minced

2 cloves garlic, minced

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

2 green onions, chopped (for garnish)

1 tablespoon vegetable oil

Salt and pepper to taste

Cooked white rice (for serving)

Marinate the Chicken: In a large bowl, combine soy sauce, bourbon, brown sugar, apple cider vinegar, ginger, and garlic. Add the chicken and mix until well coated. Cover and let it marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

    Sauté the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Remove the chicken from the marinade (keeping the marinade for later) and season with salt and pepper. Add the chicken to the skillet in a single layer. Cook for about 5-7 minutes, until browned and cooked through. Remove the chicken from the pan and set aside.

      Make the Sauce: In the same skillet, pour in the reserved marinade. Bring it to a simmer and cook for about 3 minutes to let the flavors meld. Stir in the cornstarch slurry and continue to stir for an additional minute until the sauce thickens.

        Combine and Serve: Return the chicken to the skillet and toss to coat in the thickened sauce. Cook for another 2 minutes until heated through. Serve the Bourbon Bliss Chicken over cooked white rice and garnish with chopped green onions.
