1 pound gnocchi (store-bought or homemade)

4 ounces Boursin cheese (garlic & fine herbs or your preferred flavor)

4 strips bacon, chopped

2 cups broccoli florets

2 tablespoons olive oil

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Freshly grated Parmesan cheese for serving

Chopped fresh parsley for garnish (optional)

Instructions
 

Cook the Gnocchi: In a large pot of salted boiling water, cook the gnocchi according to package instructions, or until they float to the surface. This usually takes about 2-3 minutes. Drain and set aside.

    Sauté the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook, stirring occasionally, until the bacon is crispy, about 5-7 minutes. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate, leaving the rendered fat in the skillet.

      Cook the Broccoli: In the same skillet with the bacon fat, add the broccoli florets. Sauté for about 3-4 minutes until bright green and slightly tender. Stir in the minced garlic and red pepper flakes (if using), cooking for an additional 1-2 minutes until fragrant.

        Combine with Gnocchi: Add the cooked gnocchi to the skillet with the broccoli. Drizzle the olive oil over the mixture, and season with salt and pepper. Gently toss to combine and heat through.

          Add Boursin Cheese: Remove the skillet from heat and add the Boursin cheese. Stir until the cheese melts and coats the gnocchi and broccoli evenly.

            Finish with Bacon: Return the crispy bacon to the skillet and toss everything lightly to mix well. If needed, adjust seasoning with salt and pepper to taste.
