4 thick-cut boneless pork chops

4 oz Boursin cheese (garlic & herb flavor)

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon balsamic glaze (for drizzling)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Pork Chops: Using a sharp knife, make a pocket in each pork chop by cutting horizontally into the thick side, being careful not to cut all the way through.

      Make the Filling: In a medium bowl, combine the Boursin cheese with the chopped spinach. Mix well until the spinach is evenly incorporated into the cheese.

        Stuff the Chops: Generously stuff each pork chop pocket with the Boursin and spinach mixture, ensuring they are well filled.

          Season the Chops: Rub the outside of each pork chop with olive oil, garlic powder, onion powder, salt, and pepper. Make sure to coat them evenly for better flavor.

            Sear the Chops: Heat a large oven-safe skillet over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side, until they're golden brown.

              Add Cherry Tomatoes: Scatter the halved cherry tomatoes around the chops in the skillet.

                Bake: Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature of the pork chops reaches 145°F (63°C).

                  Drizzle and Serve: Once done, remove from the oven, drizzle with balsamic glaze, and let rest for 5 minutes before serving.
