Ingredients
  

1 pound breakfast sausage (bulk or casings removed)

8 large eggs

2 cups whole milk

1 cup shredded cheddar cheese

1 cup diced bell peppers (any color)

1/2 cup chopped onion

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

6 slices of bread (preferably day-old, cubed)

Optional: Fresh herbs (e.g., parsley or chives) for garnish

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, cook the sausage until browned and cooked through. Break it into crumbles as it cooks for even browning. Once done, remove from heat and drain excess grease.

      In a large bowl, whisk together the eggs and milk until well combined. Season with garlic powder, oregano, salt, and pepper to taste.

        Stir in the cooked sausage, diced bell peppers, chopped onion, and half of the shredded cheddar cheese into the egg mixture.

          Fold in the cubed bread until all pieces are coated in the egg mixture.

            Grease a 9x13 inch baking dish and pour the mixture evenly into the dish. Top with the remaining cheddar cheese.

              Bake in the preheated oven for 30-35 minutes, or until the casserole is set in the middle and the top is golden brown.

                Let it cool for 5-10 minutes before slicing into squares or rectangles to serve.
