Ingredients

8 ounces elbow macaroni

2 cups fresh broccoli florets

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

2 cups sharp cheddar cheese, grated

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon mustard powder

Salt and pepper to taste

1/2 cup breadcrumbs (optional, for topping)

1/4 teaspoon smoked paprika (optional, for added flavor)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. In the last 3 minutes of cooking, add the broccoli florets. Drain and set aside.

Make the Roux: In the same pot, melt the butter over medium heat. Whisk in the flour and stir constantly for about 1-2 minutes until the mixture is slightly golden and bubbly.

Add Milk: Gradually whisk in the milk, ensuring there are no lumps. Continue to whisk until the mixture thickens slightly (about 5 minutes).

Incorporate Cheese and Spices: Remove the pot from heat and stir in the grated cheddar cheese until melted and smooth. Add garlic powder, onion powder, mustard powder, salt, and pepper. Adjust seasoning according to your taste.

Combine Macaroni, Broccoli, and Cheese: Add the cooked macaroni and broccoli into the cheese sauce, stirring until everything is well coated.

Optional Topping: If you’d like a crunchy topping, preheat your oven to 350°F (175°C). Pour the mac and cheese into a greased baking dish, sprinkle the breadcrumbs and smoked paprika on top, and bake for 15-20 minutes until golden and bubbly.

Serve: Let it rest for a couple of minutes before serving.

                Prep Time: 10 minutes | Total Time: 30 minutes | Servings: 4-6

                  - Presentation Tips: Serve in bowls with a sprinkle of extra cheddar on top and a few broccoli florets for garnish. For a pop of color, add a sprinkle of chili flakes for an eye-catching finish.
