2 cups fresh broccoli florets

2 medium potatoes, peeled and diced

1 small onion, chopped

2 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

1 ½ cups shredded sharp cheddar cheese

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon smoked paprika (optional)

Fresh chives or parsley for garnish

Instructions
 

Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.

    Cook Potatoes: Add the diced potatoes, salt, and pepper to the pot. Pour in the broth and bring to a boil. Once boiling, reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.

      Add Broccoli: Stir in the fresh broccoli florets and smoked paprika (if using). Simmer for another 5-7 minutes until the broccoli is bright green and tender.

        Blend the Soup: Using an immersion blender, carefully purée the soup until smooth. Alternatively, you can blend in batches using a countertop blender, but be cautious as the soup will be hot!

          Make it Creamy: Once blended, return the soup to the pot over low heat. Stir in the heavy cream and shredded cheddar cheese until melted and well combined. Taste and adjust seasoning if necessary.
