2 boneless, skinless chicken cutlets

1 cup cherry tomatoes, diced

1/4 cup fresh basil leaves, chopped

1 garlic clove, minced

1 tablespoon balsamic vinegar

1 tablespoon extra virgin olive oil

Salt and pepper, to taste

1/2 cup shredded mozzarella cheese

1 teaspoon Italian seasoning

1 tablespoon grated Parmesan cheese

Fresh basil leaves for garnish

Prep the Bruschetta Topping: In a medium bowl, combine the diced cherry tomatoes, chopped basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper. Mix well and set aside to let the flavors meld.

    Cook the Chicken Cutlets: Heat a non-stick skillet over medium-high heat. Season the chicken cutlets with Italian seasoning, salt, and pepper on both sides. Add a drizzle of olive oil to the skillet. Once hot, add the cutlets and cook for about 3-4 minutes on each side, or until the internal temperature reaches 165°F (75°C) and they are golden brown.
