Ingredients

1 baguette or ciabatta loaf, sliced into 1/2 inch thick pieces

2 cups cherry tomatoes, halved

3 cloves garlic, minced

1/4 cup fresh basil leaves, finely chopped

1/4 cup extra virgin olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

1 teaspoon red pepper flakes (optional)

1/2 cup grated parmesan cheese (optional for topping)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Tomato Topping: In a mixing bowl, combine the halved cherry tomatoes, minced garlic, chopped basil, olive oil, balsamic vinegar, salt, pepper, and red pepper flakes (if using). Stir well and let it marinate for about 10-15 minutes to enhance the flavors.

Toast the Bread: Arrange the sliced baguette or ciabatta on a baking sheet. Drizzle or brush the tops with a little olive oil. Bake in the preheated oven for 6-8 minutes or until the bread is golden brown and crispy.

Top the Bread: Once the bread is toasted, remove it from the oven. Spoon a generous amount of the marinated tomato mixture on top of each slice. Optionally, sprinkle grated parmesan cheese over the bruschetta for added flavor.

Final Bake: Return the topped bruschetta to the oven for another 2-3 minutes, just until the cheese melts slightly, if using.

Serve: Remove from the oven and let cool for a minute before serving. Drizzle with a touch more olive oil and garnish with fresh basil leaves.
