1/2 cup unsalted butter

1 cup semi-sweet chocolate chips

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 cup creamy peanut butter

1 cup powdered sugar

1 tablespoon milk

1/2 teaspoon vanilla extract (for the filling)

8 ounces chocolate (for melting, either semi-sweet or dark)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line it with mini muffin liners.

    Make the Brownie Batter: In a medium saucepan, melt the butter and chocolate chips together over low heat, stirring continuously until smooth. Remove from heat and let it cool slightly.

      Combine Wet Ingredients: In a mixing bowl, whisk together the sugar, eggs, and vanilla extract. Gradually add the melted chocolate mixture, stirring until well combined.

        Add Dry Ingredients: In another bowl, mix together the flour, salt, and baking powder. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

          Bake Brownies: Spoon the brownie batter into the prepared mini muffin tin, filling each cup about 3/4 full. Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let them cool completely in the tin before removing.

            Prepare Peanut Butter Filling: In a mixing bowl, combine peanut butter, powdered sugar, milk, and vanilla extract. Mix until smooth and creamy.

              Assemble the Bites: Once the brownie bites have cooled, use your thumb or a small spoon to create an indent in the center of each brownie bite. Fill the indent with the peanut butter mixture.

                Melt the Chocolate: In a microwave-safe bowl, melt the chocolate in 30-second intervals, stirring in between until fully melted and smooth.

                  Top with Chocolate: Using a spoon, drizzle or spoon the melted chocolate over each filled brownie bite to cover the peanut butter filling.

                    Set: Let the chocolate set at room temperature or in the refrigerator for about 30 minutes until firm.
