Ingredients

16 large portobello or cremini mushrooms

1 cup cooked shredded chicken

1/2 cup cream cheese, softened

1/2 cup buffalo sauce (adjust to taste)

1/4 cup ranch dressing

1/2 cup shredded cheddar cheese

1/4 cup crumbled blue cheese (optional)

2 tablespoons green onions, chopped (for garnish)

Olive oil

Salt and pepper, to taste

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare Mushrooms: Clean the mushrooms with a damp cloth and remove the stems. Use a small spoon to gently scrape out the gills for extra space. Drizzle olive oil over the mushroom caps and season with salt and pepper.

Make the Buffalo Chicken Filling: In a medium bowl, combine the shredded chicken, softened cream cheese, buffalo sauce, ranch dressing, shredded cheddar, and blue cheese (if using). Mix until well combined.

Stuff the Mushrooms: Spoon the buffalo chicken mixture generously into each mushroom cap, packing it in gently.

Bake: Place the stuffed mushrooms on a baking sheet lined with parchment paper. Bake in the preheated oven for about 20-25 minutes, or until the mushrooms are tender and the filling is bubbly and golden on top.

Garnish and Serve: Remove from the oven and let cool for a few minutes. Sprinkle with chopped green onions before serving.
