Buffalo Chicken Mac & Cheese

8 ounces elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup cooked chicken, shredded (preferably rotisserie)

1/2 cup buffalo wing sauce (adjust to taste)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 cup blue cheese crumbles (optional)

Chopped green onions for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for about 2 minutes, whisking continuously until it becomes a light golden color.

      Add Milk: Gradually whisk in the whole milk, making sure there are no lumps. Continue to whisk until the mixture thickens and bubbles (about 5-7 minutes).

        Cheese It Up: Lower the heat and stir in the cheddar cheese and mozzarella until melted and smooth. Add in the garlic powder, onion powder, salt, and pepper.

          Mix in Chicken and Sauce: Fold in the shredded chicken and buffalo wing sauce, stirring until all ingredients are well combined.

            Combine with Pasta: Add the cooked macaroni to the cheese sauce, mixing thoroughly to ensure all the macaroni is coated with the sauce.

              Optional Baking Step: If desired, transfer the mixture to a greased 9x13 baking dish, sprinkle with blue cheese crumbles, and bake at 350°F (175°C) for 20 minutes, until bubbly and golden on top.
