1 pound large shrimp, peeled and deveined

1/2 cup buffalo sauce

1 tablespoon olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon paprika

1/2 cup celery, finely diced

1/2 cup carrots, grated

1/4 cup blue cheese, crumbled (optional)

1 head of romaine lettuce or butter lettuce, leaves separated

Fresh cilantro or parsley for garnish

Instructions
 

In a bowl, toss the shrimp with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.

    Preheat a grill or grill pan over medium-high heat. Add the seasoned shrimp and cook for about 2-3 minutes on each side or until they turn pink and are cooked through.

      Once cooked, remove the shrimp from the heat and toss them in the buffalo sauce until completely coated.

        Prepare the lettuce wraps by taking a leaf of lettuce and placing a few buffalo shrimp inside.

          Top the shrimp with diced celery and grated carrots, adding blue cheese crumbles if desired.

            Garnish with fresh cilantro or parsley.

              Serve immediately, allowing guests to assemble their own wraps.
