2 boneless, skinless chicken breasts

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1 tablespoon olive oil

1 cup cooked brown rice (or quinoa)

1 cup black beans, drained and rinsed

1 cup corn, fresh or frozen

1 avocado, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

1/2 cup Greek yogurt (or sour cream)

Optional toppings: shredded cheese, salsa, tortilla strips

Instructions
 

Marinate the Chicken: In a bowl, combine the chili powder, cumin, garlic powder, smoked paprika, salt, pepper, and olive oil. Rub this mixture over the chicken breasts and let it marinate for at least 30 minutes (or up to overnight in the fridge for more flavor).

    Cook the Chicken: Preheat your grill or grill pan over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let it rest for 5 minutes before slicing.
