500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons plain yogurt

1 tablespoon turmeric powder

1 tablespoon garam masala

1 tablespoon cumin powder

1 tablespoon ginger-garlic paste

3 tablespoons ghee or unsalted butter

1 large onion, finely chopped

2 large tomatoes, pureed

1 cup heavy cream

Salt to taste

Fresh cilantro for garnish

1 tablespoon sugar

Optional: 1-2 green chilies, slit

Marinate the Chicken: In a bowl, mix the chicken pieces with yogurt, turmeric powder, garam masala, cumin powder, ginger-garlic paste, and salt. Let it marinate for at least 30 minutes (or up to overnight in the fridge for deeper flavor).

    Cook the Chicken: In a large skillet, heat 1 tablespoon of ghee over medium heat. Add the marinated chicken pieces in batches until golden and cooked through, about 5-7 minutes. Remove the chicken and set aside.

      Prep the Sauce: In the same skillet, add the remaining ghee. Sauté the chopped onions until they turn golden brown, about 5-6 minutes. Add the tomato puree and cook for about 10 minutes until the sauce thickens and the raw smell disappears.

        Combine Chicken and Sauce: Stir in the heavy cream, sugar, and cook for another 2-3 minutes. Add the cooked chicken back into the sauce, and let it simmer for 10 minutes on low heat, stirring occasionally. Adjust salt to taste, and add slit green chilies for added heat if desired.

          Garnish and Serve: Remove from heat, and garnish with fresh cilantro. Serve hot with naan bread or steamed basmati rice to soak up the rich sauce.
