Ingredients

4 lobster tails, thawed (if frozen)

¼ cup unsalted butter, melted

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 tablespoon fresh parsley, chopped

1 teaspoon paprika

½ teaspoon salt

¼ teaspoon black pepper

Lemon wedges, for serving

Instructions

Prepare the Lobster Tails: Carefully turn the lobster tails over and use kitchen scissors to cut down the middle of the shell, stopping just before the fin. Gently pull the shell apart to expose the meat while keeping it attached at the tail end. Carefully lift the meat out and lay it on top of the shell, creating a butterfly effect.

Make the Garlic Butter: In a small bowl, combine the melted butter, minced garlic, lemon juice, chopped parsley, paprika, salt, and black pepper. Mix well until combined.

Preheat the Grill: Preheat your grill to medium-high heat (about 400°F / 200°C).

Grill the Lobster Tails: Brush the lobster meat generously with the garlic butter mixture. Place the lobster tails shell-side down on the grill. Close the grill lid and cook for about 6-8 minutes, basting with more garlic butter halfway through, until the meat is opaque and firm.

Serve: Once cooked, remove the lobster tails from the grill and let them rest for a minute. Serve with lemon wedges and the remaining garlic butter for dipping.
