2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and cubed

1 cup buttermilk, cold

1 tablespoon honey (optional, for a hint of sweetness)

Extra flour for dusting

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs with some pea-sized pieces of butter remaining.

        Pour in the cold buttermilk and honey, if using. Stir gently with a wooden spoon until just combined. Do not overmix; a few lumps are okay.

          Turn the dough onto a lightly floured surface and knead gently for about 1 minute until it comes together.

            Roll out the dough to about 1 inch thick. Using a sharp biscuit cutter or a drinking glass, cut out biscuits and place them on a baking sheet lined with parchment paper. Gather any scraps, gently knead them together, and cut out additional biscuits.

              Bake in the preheated oven for 12-15 minutes, or until the tops are lightly golden and the biscuits have risen beautifully.

                Remove from the oven and let cool slightly before serving. Optional: Brush the tops with melted butter for extra richness.
