Ingredients
  

For the Chicken:

2 lbs chicken thighs (boneless and skinless)

1 cup buttermilk

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp cayenne pepper (adjust for spice)

Salt and pepper to taste

1 cup all-purpose flour

½ cup cornstarch

Oil for frying

For the Sandwich:

4 brioche buns

4 slices of sharp cheddar cheese

1 cup coleslaw (store-bought or homemade)

4 tablespoons mayonnaise

2 tablespoons hot sauce (optional)

Pickles for topping

Lettuce leaves (optional)

Instructions
 

Marinate the Chicken:

    - In a large bowl, whisk together the buttermilk, paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.

      - Add the chicken thighs to the buttermilk mixture, ensuring they're fully submerged. Cover and refrigerate for at least 2 hours (preferably overnight) to allow the flavors to meld.

        Prepare the Dredging Station:

          - In a separate bowl, combine the all-purpose flour, cornstarch, and a pinch of salt and pepper.

            - Heat oil in a large skillet over medium-high heat. You’ll need enough oil to fry the chicken pieces (about ½ inch deep).

              Dredge the Chicken:

                - Remove the chicken from the buttermilk marinade and let the excess drip off.

                  - Dip each thigh into the flour mixture, coating well and shaking off any excess.

                    Fry the Chicken:

                      - Once the oil is hot (around 350°F), carefully place the chicken pieces into the skillet. Fry in batches to avoid overcrowding.

                        - Cook for about 6-7 minutes on each side until golden brown and cooked through. The internal temperature should reach 165°F. Drain on paper towels and season with salt while hot.

                          Assemble the Sandwich:

                            - Toast the brioche buns until golden brown.

                              - Spread a tablespoon of mayonnaise on the bottom half of each bun. Drizzle with hot sauce if using.

                                - Place a crispy chicken thigh on top, then add a slice of cheddar cheese, followed by a generous scoop of coleslaw, pickles, and lettuce.

                                  - Add the top half of the bun and press down gently.

                                    Serve:

                                      - Slice the sandwiches in half and serve immediately while the chicken is hot and crispy. Enjoy with your favorite sides like fries or chips!
