400g spaghetti or tonnarelli

150g Pecorino Romano cheese, finely grated

1 tablespoon fresh cracked black pepper

1 tablespoon olive oil

1 cup pasta water (reserved from cooking)

Sea salt, to taste

1 teaspoon lemon zest

2 tablespoons fresh parsley, chopped (optional for garnish)

Instructions
 

Bring a large pot of salted water to a boil. Add the spaghetti or tonnarelli and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.

    In a large mixing bowl, combine the finely grated Pecorino Romano cheese and cracked black pepper. Stir well to create a cheesy, peppery mixture.

      In a large skillet, heat the olive oil over medium heat. Add a few tablespoons of the reserved pasta water to thin out the cheese mixture slightly. Stir the mixture until it becomes a creamy consistency.

        Once the pasta is cooked and drained, add it directly to the skillet with the cheese mix. Toss gently to coat the pasta, adding more pasta water gradually until the sauce reaches your desired consistency.

          Stir in the lemon zest for a fresh twist and season with sea salt to taste. Ensure everything is well combined.

            Serve immediately, garnished with chopped parsley and extra PECORINO if desired.
