Cajun Chicken Alfredo Stuffed Shells

12 jumbo pasta shells

2 cups cooked chicken, shredded

1 cup Alfredo sauce

1 cup diced bell peppers (red and green)

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 teaspoon Cajun seasoning

1/2 teaspoon paprika

1/2 teaspoon black pepper

1/4 teaspoon salt

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat oven: Preheat your oven to 350°F (175°C).

    Cook the pasta: Bring a large pot of salted water to a boil. Add the jumbo pasta shells and cook according to package instructions until al dente. Drain and set aside.

      Prepare the filling: In a large skillet, heat olive oil over medium heat. Add the chopped onion, bell peppers, and garlic. Sauté for 4-5 minutes or until the vegetables are softened.

        Add chicken and spices: Stir in the shredded chicken, Cajun seasoning, paprika, black pepper, and salt. Cook for another 2-3 minutes until everything is well combined and heated through.

          Mix in Alfredo sauce: Remove the skillet from heat and add 1 cup of the Alfredo sauce to the chicken and vegetable mixture. Stir until well mixed.

            Stuff the shells: Carefully fill each cooked pasta shell with the Cajun chicken Alfredo mixture and place them in a greased baking dish.

              Top it off: Pour the remaining Alfredo sauce evenly over the stuffed shells. Sprinkle the shredded mozzarella and Parmesan cheese on top.

                Bake: Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and slightly golden.

                  Garnish and serve: Remove from the oven and let it sit for a few minutes. Garnish with fresh chopped parsley before serving.
